"I purchased my roaster 12 years ago from Sherman Dodd. This is a man I respect so much in the coffee industry. Sherman is a man who stands for the highest quality, who compromises on nothing and who builds the best coffee roaster. I have worked in the coffee industry for 19 years now I have roasted coffee on several roasters and cupped the results of many batches of coffee. I have found the San Franciscan Coffee Roaster to be one of the most manipulative roasters you can work with. What I mean about manipulative is this, the San Franciscan Coffee Roaster that I have roast 25 pounds of coffee. How you (the Roastmaster) decide you want to finish the coffee is totally up to you. The Roastmaster has total control. There is more than enough BTU power to finish the coffee in a short amount of time or back off the heat and develop the coffee slowly. I can roast 6 pounds just like a large batch because I have the controls. I can control the Airflow, and heat input. Other roasters I have roasted on have been under powered for example if they are calling the roaster a 12 Kilo machine the BTU out put is not enough heat and you only get a slow roast with times as high as 28-32 minuets. In cupping out coffee developed like this most people agree it is baked, it's lacking a lively acidity or it is Flat in its flavor. Other roasted have such bulkiness that is hard to explain until you have experienced this. I will give you an example; I will often roast 200 pounds of our Italian roast coffee, I do this in batches of 25 pounds. I use the cooling tray for blending coffees in-between the roast. Some roasters do not allow cooling and blending at the same time while roasting, so in the long run by multi tasking I can accomplish a lot of blending and packing orders as I'm roasting more coffee."
"Fourteen years ago, I rebuilt an old 1924 Probat G-90 coffee roaster. So yes, I know what production roasting all about as I would roast 2400 pounds of coffee in the first four hours of my morning. I have roasted on large roasters form Italy and Germany. I found the San Franciscan coffee roaster to be simple to access in regards to cleaning out the afterburner or cooling tray. Occasionally the roaster needs to be broken down to clean out the exhaust pipes I have found this to be an easy task and easy to get put back together. If I have a question or need anything Sherman is there backing it up. Oh I almost forgot to tell you his wife Phyllis is truly gem as she keep the office running this is a family business that you simply become a raving fan of. "
